Thai Carrot Slaw is the meal that shows up when your body starts begging for that fresh veggie crunch. You know the moment—day three on trail, you’ve been cruising on bars and ramen, and suddenly all you can think about is something fresh, crunchy, and colorful. This slaw answers that call in the most satisfying way possible.

The star of the show is carrots—lots of them—sourced from our local farms, marinated, and dehydrated to lock in their natural sweetness and crunch. They’re joined by crisp cabbage and tossed with a bright, tangy Thai-inspired seasoning that hits all the right notes: a little sweet, a little salty, a little spicy. The real magic happens at the end, when you stir in the packet of salty peanut pieces for that perfect crunchy finish.

No stove needed here. Just add cold water, give it a stir, and let the veggies come back to life while you kick back and soak in the view.

Farm Feature

Carrots From Fields to Plate Farm

Featuring carrots grown just 15 minutes north of our facility at Fields to Plate Farm, a 10-acre organic vegetable farm tucked into the Animas River Valley. Run by Max and his wife Emily, this farm is a true example of thoughtful, small-scale agriculture rooted in soil health, flavor, and community.

Most carrots eaten in the U.S. are bred for uniform size, durability, and long shelf life. Locally grown carrots are different—they’re grown for sweetness and crunch, and you can absolutely taste the difference. The high elevation and rocky soils of southwest Colorado are an added bonus-creating natural stress that concentrates sugars into the carrot root and delivers that satisfying snap. Those same conditions mean some carrots grow squat, twisted, or with extra little “legs”—perfectly delicious carrots that just don’t meet grocery-store beauty standards.

That’s where we come in. We purchase thousands of pounds of these “seconds” carrots from Max and Emily, transforming them into a craveable backpacking meal instead of leaving them behind in the field.
