Thai Carrot Slaw: the meal that always gets a spot in my pack

When day three on the trail hits and your body starts begging for real vegetables, this crunchy Thai Carrot Slaw delivers. Tangy, colorful, and packed with flavor, it’s the no-cook backcountry meal your body—and soul—will thank you for.

We designed this meal for that unmistakable day-three feeling on a backpacking trip—you know the one. When you realize you’ve been surviving on Snickers bars and pasta and suddenly your body (and soul) are begging for colorful veggies with a crunch. Physically necessary. Spiritually crucial.

This slaw is all about the vegetables. We source the freshest, sweetest carrots, red cabbage, and green cabbage entirely from our local farms, then transform them with a long marinade before gently dehydrating to lock in flavor and nutrients. When it’s time to assemble your meal, the dehydrated veggies get blended with our tangy spice powder, sesame seeds, and scallions before a packet of peanuts is added to the top.

Rehydration couldn’t be easier: just add cold water. That’s it. Stir, wait about 15 minutes, then mix in the included packet of salty peanut pieces. The result is crunchy, tangy, a little sweet, a little spicy, and wildly satisfying—no stove required.

On its own, this slaw is a protein-rich, veggie-packed salad—the kind of thing your body craves when you’re deep into big days outside (or honestly just need some nutrients, period). Our go-to trail lunch. Spread a little hummus on a tortilla, top with the rehydrated slaw (strain slightly if needed), roll it up, and boom—fresh, crunchy, flavor-packed finger food that eats like a dream anywhere. Did I eat this at my desk last week? Absolutely I did.

Ramen Upgrade

Hot or cold—this one’s choose a 'choose your own adventure' sort of thing. But I LOVE the slaw stirred into hot ramen for a veggie-loaded, noodly dinner that feels like a magical ending to a long day.
