At the heart of this meal are Anasazi beans, a historic bean native to the Southwest that tastes similar to a pinto but carries deep roots in this landscape—dating back to when Puebloan people lived and farmed throughout the region. These beans are combined with black beans and then cooked down with rice into a rich locally sourced red chile sauce that is packed with zucchini, and bell pepper.

Eat it straight from the bag, scoop it into tacos, or roll it up in a burrito—however you serve it, this bowl brings bold Southwestern flavor and long-lasting energy.

Featuring Anasazi beans grown by Adobe Milling, located just an hour west of our facility in Southwest Colorado. These beans are grown using dryland farming—a method well suited to arid regions that relies solely on natural rainfall and moisture conserved in the soil, with no irrigation. Anasazi beans are a striking heirloom variety with deep roots in the Four Corners region, traditionally cultivated by the Ancestral Puebloans as part of a resilient, land-adapted food system.

Today, Adobe Milling keeps this legacy alive by sourcing and processing locally grown Anasazi beans in Dove Creek, Colorado. Known for their naturally sweet, creamy texture and beautiful red-and-white pattern, these beans cook faster and digest more easily than many conventional varieties. Rich in plant-based protein and fiber, they bring both nourishment and authentic regional flavor to our Puebloan Beans and Rice—honoring the land, the crop, and the people who first grew it.
