Rainbow Pasta is the meal for the kiddo in your life—or the kiddo still living inside you. It’s colorful, comforting, and simple in all the right ways.

The star of the show is the pasta itself. We dye our noodles in-house using vegetables sourced from our local farms, giving them their natural rainbow of colors. Once rehydrated, the noodles are coated in a creamy white cheddar cheese sauce that delivers all the cozy mac-and-cheese vibes.

We also blend powdered kale, chard, and broccoli right into the cheese packet, adding another layer of veggie nutrients without overpowering the flavor. You’ll spot tiny green flecks throughout the pasta—proof that the vegetables are in there and perfect for picky eaters who still want the goodness of veggies without the fuss.

Broccoli From Beet Street Farm

Featuring broccoli grown just north of Durango at Beet Street Farm, a family-run, diversified produce farm rooted in the Animas River Valley. Founded in 2016 by Brian and Stacey Petrie, Beet Street has grown from a bare patch of prairie into a thriving nine-plus-acre farm, producing nutrient-dense vegetables using conservation-focused practices that prioritize soil health, biodiversity, and long-term land stewardship.We focus on using Beet Street’s “seconds” broccoli—florets that are too small or too large for market shelves but just right for good food. The broccoli is lightly blanched before being added to the meal to preserve color, nutrients, and flavor. The stalks don’t go to waste either; they’re saved for a local pig farmer who stops by weekly to pick up snacks for “his ladies.” It’s thoughtful farming and intentional processing, working together to turn overlooked vegetables into something nourishing, flavorful, and worthy of the trail.
