Harvest Green Curry is the meal for when you’re craving something warm, vibrant, and seriously packed with vegetables. If you’re the kind of person who looks at a trail menu and thinks “but where are the veggies?”—this one’s for you.
The base of this curry is something pretty special. We start with delicata and butternut squash sourced from our local farms, roast them to bring out their natural sweetness, then dehydrate and powder them into a rich veggie sauce base. When rehydrated, it transforms into a creamy curry that’s both comforting and packed with real vegetable flavor.
From there we load it up- rice, a colorful mix of broccoli, tomato, zucchini, squash, and carrot to soak up the warm green curry spices. Coconut, ginger, garlic, and lime round everything out, creating a bowl that’s fragrant, slightly sweet, and deeply satisfying.
