Green curry built on a warm, creamy base of coconut and roasted winter squash. Packed with our farm-favorite veggies and fragrant jasmine rice, this one is comforting, nourishing, and deeply satisfying—real food that tastes like it came from a kitchen, not a pouch.

Harvest Green Curry is the meal for when you’re craving something warm, vibrant, and seriously packed with vegetables. If you’re the kind of person who looks at a trail menu and thinks “but where are the veggies?”—this one’s for you.

The base of this curry is something pretty special. We start with delicata and butternut squash sourced from our local farms, roast them to bring out their natural sweetness, then dehydrate and powder them into a rich veggie sauce base. When rehydrated, it transforms into a creamy curry that’s both comforting and packed with real vegetable flavor.

From there we load it up- rice, a colorful mix of broccoli, tomato, zucchini, squash, and carrot to soak up the warm green curry spices. Coconut, ginger, garlic, and lime round everything out, creating a bowl that’s fragrant, slightly sweet, and deeply satisfying.

You’ll get a slow, cozy spice that builds as you eat—enough to feel exciting and flavorful, but still balanced and approachable. If you enjoy a little kick and big flavor without breaking a sweat, this one’s your jam.

It's in the sauce! We roast the squash first to bring out its natural sweetness, then grind it down and blend it straight into the curry sauce. The result is a rich, creamy base that adds body, flavor, and nourishment.

Featuring delicata squash grown just 15 minutes north of our facility at Fields to Plate Farm, a 10-acre organic vegetable farm tucked into the Animas River Valley and run by Max and his wife Emily. Delicata thrives in our high-elevation climate, producing sweet, nutrient-dense squash with thin, tender skin and a naturally rich flavor—no peeling required.Each season, we source thousands of pounds of delicata from Fields to Plate. We carve out the seeds, roast the squash to deepen its natural sweetness, then dehydrate and grind it into a smooth powder that becomes the backbone of our curry. Delicata squash is naturally high in fiber, potassium, and vitamin A, adding both nourishment and a subtle sweetness that balances the warm spices of the dish. It’s a perfect example of how locally adapted crops—grown close to home and processed with intention—can deliver big flavor from humble beginnings
