Rich coconut milk powder mellows the spice of red curry paste while ginger, garlic, and lime bring a punch of brightness. When it all comes together, you get a deeply satisfying bowl that’s savory, slightly spicy, and wildly comforting—without feeling heavy. Kale From Long Table Farm

Featuring kale grown in Durango at Long Table Farm, a woman-owned, diversified vegetable farm with deep roots in the local food community. Run by Morgan Di Santo, Long Table focuses on nutrient-dense, chemical-free produce grown using soil-first practices that prioritize long-term land and ecosystem health. We use a mix of green and purple kale varietals, grown for flavor, nutrition, and resilience—not uniformity.

Once harvested, we shuck the tender kale leaves from their stalks, lightly blanch them, and dehydrate the leaves to lock in color, nutrients, and flavor for the trail. Nothing goes to waste—the leftover stalks are saved for a local pig farmer who picks up our organic kitchen compost weekly. It’s a full-circle system rooted in respect for the land, the people who grow our food, and the belief that thoughtful processing can make great vegetables even better.
